Here’s a few recipes from the Mexican family of cuisines. Some of these may be a little more Tex-Mex, New Mexican than strictly Mexican; such will duly tagged.
- Blue Corn Pozole: an excellent and hearty soup from pozole corn and meat.
- Another excellent soup: garlic ancho soup. Note that pasilla chiles may be used in place of ancho chiles, or both may be used in proportion to balance the flavor. The pasilla tends to be a little bit hotter, but a little more bitter as well.
